I’m too tired to write EVERYTHING about going to Texas right now.. but once I rest I will write ALL about it… I love Texas!!! And it was so good to visit and talk about old times and memories.. I took like 5 pictures!!! I always do that.. but I was too busy to take pictures! Dewaynes wedding was pretty.. He looked dashing in his white suit!! I’m so glad I was able to be there for his special day. Right now I’m going to crash. But I will post all the details later.

AAAAAAAARRRGHH!!!
That’s how I feel!!!! hah. I think partly is the HEAT!!! IT’s 100 in APRIL!! Where are the April Showers??? We won’t have May Flowers. =( I have been working feverishly to meet my deadline… Hence the fact that I just got done at 2:30 in the MORNING !!! This is NOT a usual occurence however.. I need my beauty rest. =) I finally got the MOST difficult part completed from here on, its just finding more information. But I have the basics. I’m very glad. So if I don’t blog as much as usual it because I”M SWAMPED!!! However, I love working at home. It’s wonderful. But I hope it cools down BECAUSE we live upstairs and heat RISES!!!! And we don’t have Central Heating & Air. Thank the Lord that we have window units because it saved our bacon last night. It was like a sauna in our house… yuck … Hope all you guys are staying “cool”.

Youth Convention .. Last Night

All I can say is WOW!!!! I wish I could have been here all week.. But it wasn’t possible.. Maybe next year. So we got here late.. Like 7:45.. And it was ok because there were soooooooooo many preliminaries… Preaching didn’t start till after 9pm.. BUT that’s just how it is.. Giving honor where honor is due.. BRO. WEST!!!! hah. You just had to be there! If there was ever any doubt, be assured We LOVE BRO. WEST!! He and Leah are amazing people and great leaders!! Section 5 is lucky to have them!
So during all the talking and singing, I was not totally plugged in, but mostly because it was so long. But dad taught us that when the preaching starts bring your mind together and GET to church. Which wasn’t hard because it was Uncle Ken. Bro. Ken Gurley… He is such a great preacher!! I think the title was ” I Am The Revival”. What a awesome message for the last night of Youth Convention!!! I felt like the young people just grabbed on to what he was saying and were just READY to have a move of God.
He had us pray before we came down to the alter for a boldness. Which we prayed for, not that I neccasarily NEEDED to pray for it. LOL! I just prayed ” God lead me to the honest hearted people and let me pray at least ONE person through to the Holy Ghost that’s NEVER had it!! And use me to speak to people. All I can say is when you pray that you better mean it!! It was like the Holy Ghost just took over my body! 2 HOURS passed before I realized, wow I just prayed 3 brand new people through to the Holy Ghost!! Tears streaming, and all the sudden seeing them start to speak in that heavenly language.. One of the girls got DRUNK!!! It was awesome. In between praying for new people, I spoke to a few church kids too. I am always amazed by this. I know it’s God because if it was me I’d be like ” hey you can make it, it’s ok”. But when it’s GOD.. Its a DIRECT word!! And plus I wouldn’t just go up to people that I don’t know and be like ” hey blah blah blah… unless it was like about what they were wearing or something… But just complete strangers.. say this, say that… .weird, but exciting, and new and frightening at times.. But AWESOME!!!!
I am so excited that I had prepared for this. Prayed and fasted, and asked God in advance to use me, to be a blessing! I didn’t go to get anything for myself, I went to pray for people. And in turn that’s how I received my blessing!
You should have seen my dad!!! I think he was training some of the young preachers… I saw him with Omar a few times. He was telling this guy ” that’s it!! That’s the Holy Ghost! Omar lay hands on him!! And when Omar did, he started speaking in tongues!! I saw SEVERAL of our young guys doing that… I was so proud. HOLLA – STER!
I just have to say that I love the Western District.. And I love how God moved among our youth of the district last night. I know it sounds cliche but it’s services like that, that God can change your life!! I know because it happened to me.. So that is my report!! If you didn’t get to go this year.. PLAN to go next year. It is worth it. Even if it’s only one night. You won’t regret it..
Plus I saw some really cute hair-dos, outfits, shoes, and hair accesories.. I just CAN”T leave that part out!! HAH!

Ok so first off I am NOT going to blog about Matthews accident… for those of you that think this is mean or cruel.. well you don’t know me… Go read Matthew blog or check out my face book…. I am very very very very glad he is ok.. but it’s not something I want to live through again.. I am just thankful that God was watching out for my husband and although he is sore and bruised I am so thankful to fall asleep next to him at night!!! God is so good!!!
Ok… So I have recently fell in love with green smoothies!!!! If you guys don’t know what that is .. Its basically juicing your vegetables… .This is a great way to get vegetables for those of you that don’t like EATING veggies… which is NOT ME !!!!! I LOVE eating veggies… but even I can’t get enough in a day that I need….What I was scared of was that I would be able to TASTE the veggies.. which would be gross… but as I have quickly came to find out .. Thats not the case AT ALL …. With all the fruit you can not even taste the veggies.. the only thing is it’s green.. but it doesn’t taste green… SO here is a few Green smoothie recipes… Let me know if you like them… After all its not how much you exercise… Its what you eat that makes ALL the difference… yay! Also… If you want to start out with something LIGHT TASTING try cucumber!! Kale is one of my favorites too.
Kid & husband friendly not too green green smoothie
1 very large ripe banana
2 large rainbow chard leaves
1 heaping cup frozen cherries – or any other fruit you love
enough water to blend…. ITs good!!!
Minty Thrill Smoothie
4 ripe pears
4-5 leaves of Kale
1/2 bunches mint
2 cups water….. very minty and fruity and DELISH!!!
Tropical Delight Smoothie
Milk and meat from 1 young coconut.. IF this is too hard buy your own coconut milk!! And dried coconut..
1 Mango
1/2 green papaya
11 ounces water… thats what the recipe calls for but… it think its too much .. and I used orange juice and little water… yum
1 cup pineapple
1 banana
1-2 handfuls greens.. anything you like.. celery, spinich, kale, chard.. CUCUMBER makes it very light and it’s smooth.
My FAVORITE is
The LOW CARB COCONUT SMOOTHIE
1 cup coconut milk or almond milk
1-2 teaspoons protein powder
1 tablespoons coconut butter
1 tablespoon ground flax seeds
1 teaspoon almond extract
1/4 teaspoon almond extract
1/4 teaspoon stevia powder or other sweetner
8-10 ice cubes.. or yogurt..
THIS IS AWESOME!!!!! If you live in Hollister there is a Dr. Nordstrom over on Sunnyslope that sells all kinds of COCONUT products.. butter, flakes, milk… very good for you and very tasty… I am SO thankful that I finally just TRIED it!! Anyone who knows me knows I am a VERY picky eater. So if I tell you it’s good, I mean it! I always thought, ” OHMYWORD!! It can not be good! It’s GREEN.. These people SO want to lose weight they will do anything the trainer tells them to do! Or that they were MAKING themselves drink it no matter how it tastes.. Just TRY it !!! If you are trying to lose weight or eat healthy, or get vegtables in you but HATE the taste.. This is the way to do it. You can experiment SO MUCH!! The possibilities are endless and its very healthy for you. I also would recommend that you put a whey protein powder in them. They usually come in vanilla or chocolate. I like the low carb ones, but if your not doing low carb just go to GMC or The Vitamin Shoppe and try it out. If you have the powder you can also make a regular shake.
Like with the vanilla powder. Do a scoop or however much the instructions say to use, a banana, Orange Juice, and yogurt or ice. YUM.
Also with the chocolate.. Milk or Almond milk (I use unsweetened vanilla or plain), a banana, some strawberries, coconut.. like I said the possibilities are endless! Just make sure that you don’t drink a smoothie with the protein powder then go EAT a meal!!!
A shake is supposed to take the place of a meal. A loooooong time ago I didn’t know that!! And I would drink a shake then go eat.. and I was gaining weight and when I asked the guy at the gym he was like well I see you in here all the time, why are you gaining weight.. So I started telling him and he LAUGHED IN MY FACE!!! I couldn’t believe it! I felt really dumb. So consider yourself warned!
And hey I know I’m not skinny minny but I have lost 30 pounds since I started on this eating right and exercising… I may not look like a model but I feel SO GOOD!!! I can walk up and down stairs without my knees hurting, bend over and tie my shoes, not get out of breath as easily.. etc.. I am very excited about the changes in myself and I like sharing it with others. I just had to take 4 outfits to get them taken up!!! One of my skirts that was TIGHT on me when I bought it. The lady has to take 4 INCHES from the waist!! WOO HOO!! …
Medical steroids are KILLER!!! I hope none of you guys EVER have to take them!! I used to feel like blimp! Puffy!! Now that feeling is gone.. I mean I’m a woman like everyone else and I have days I don’t want to get out the house and burrow under the covers.. BUT not near as many as before.. SO!!! If you are trying to lose weight.. KEEP TRYING!!! You can do it!! And even though sometimes its difficult changes old habits, and changing what you buy at the store.. It is SO worth it.
And you may start out HATING some foods and before long you will start to crave them!! And things that you thought you could NEVER live without… When you dont have it for a long time and then you try… It’s suddenly not as good as you remembered!!! I used to HATE drinking regular water.. I had to have those little packets to make it taste good.. Which is fine if thats all you can do.. But know.. I drink between 4-7 bottles of water a DAY!!!! My body has started craving it.. When I used to drink so much coffee, I would get a “caffeine headache” from not having any.. NOW if I get a headache I know I need to drink more water… Sooo.. Ok .. enough of that… I could go on forever.. lol.. But if any of you want some really good low carb recipes… let me know.. I have quite a few.. Also keep in mind this is NOT a diet.. This is CHANGING the way you eat.. A lifestyle change.. Like a new convert trying to live for God… You have to retrain your thinking. What’s good? What’s bad?? Is this really worth it?? If I am really thinking I want something .. I tell myself. A moment on the lips, forever on the hips. That usually wins out.. =)
Ok. NEXT So I came across this recipe…. I tweaked it a little bit because I didn’t have ALL the ingredients.. but wow. it is good… I did it with fish.. but if your not a fish person .. I think it would be good with chicken or LARGE scallops..
1 pound white fish fillets…. I used Swai Basa…. Which by the way I had years ago in Cananda & this is the FIRST time I’ve found it here!
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon salt
1 teaspoon splenda/ sugar
1/4 cup prepared brown mustard.. I used spicy brown mustard, If you do that make sure you don’t use too much or its overpowering.
1/4 cup mayo
1/4 cup chopped mixed nuts… I ground mine!!! Finely… because the recipe called for bread crumbs.. I can’t have bread.
1/4 cup shredded coconut
1. preheat oven to 375. Lightly grease baking dish.
2. In SMALL bowl mix mayo and brown mustard
3. In MEDIUM bowl mix shredded coconut, chopped mixed nuts, sufar, salt, and cayenne pepper.
4. Dip fish in Mayo mix then in nut mixture.
5 Bake 20 minutes or until easily flaky…
This is the originaly recipe.. however I tweaked it… I marinated the fish over night in the coconut milk and tequila, lime juice, salt, pepper, accent, a itty bit of orange juice.
The next day I coated the fish in shredded coconut and the shredded nuts… The nuts were done with a ZESTER .. so it was very very fine… It was absolutely WONDERFUL!!!!!!! I hope you try it and like it!!! My husband said “This is restaurant quality”! He sure knows how to make my melt. LOL.
